At Farm El Baya, a 40-acre permaculture farm near Testour, guests can join the family’s olive harvest from December to February. Pick alongside the family and learn about the work in the groves. The harvest experience costs 90 DT / €26 per guest, per stay. Bottles of olive oil are not included.
Why Tunisia is an olive country
Olive trees have been cultivated in this valley since Carthaginian and Roman times - the ruins at nearby Dougga were built on wheat and olive wealth. In the 2025/26 season, Tunisia became the world's second-largest olive-oil producer behind Spain, according to the International Olive Council - and the north, around the Medjerda valley, is some of its most fertile ground.
Farm El Baya's groves are part of that story, with a twist: four years ago the family began converting 40 acres of conventional monoculture olives to permaculture - working with the land instead of against it. The harvest is the moment the whole year points toward.
What a harvest day looks like
The work is done by hand and by comb: nets spread beneath the trees, olives raked from the branches, sorted and sacked. It is genuinely physical, genuinely satisfying work - the kind you fall into a rhythm with after twenty minutes. Guests join for as much or as little as they like.
The olives then travel to an organic mill nearby to be pressed. Fresh oil, days old, tastes nothing like supermarket oil - green, peppery, alive. Guests take their own bottles home; the oil is priced separately by size and quality.
Taste it at the source
During harvest season, breakfast on the farm (20 DT / €6 per person) comes with the year's new oil - over farm eggs, flatbread, and whatever the garden gives that morning.

The farm’s olive-harvest experience is available from December to February. Confirm the harvest dates with Mahdi before booking, and bring clothes that can get dirty and closed shoes.
